I Admit that before I lived in Panama I had no Idea Cashews came from this fruit.
There is a juice that the locals swear by that is made with just the fruit. Marañon is high in anti-oxidants and vitamin C. It is also used as a laxative. I have not personally tried the juice but I would love to. As you can see from the image below someone figured out how to spice up cocktails using the fruit.

The Cashew Roasting Process.
Currently in Panama you can find freshly roasted cashews being sold by street vendors. Cashews are one of my favorite treats. Once odd thing I noticed is that the cashews are sold unsalted. I also noticed that each fruit only has one cashew. This means that tin of cashews in your cupboard took a ton of work!
