Today I tried an experiment, making mushroom sauce from the yellowlegs that we collected in November and had in the freezer.

200 grams yellow legs, frozen
40 grams sugar 3 tbsp
1/2 tsp salt
2 tbsp apple cider vinegar

First, defrost one bag weight 200 grams, yellow legs

Added 200 ml water in it and cooked them for around 3-4 minutes.

Switched off the heat and separated water from mushrooms using a strainer.

It was exactly 1 cup of the dark-colored mushroom water. which I used for the sauce.(I saved mushrooms for another recipe )

In a heavy bottom pan, I spread sugar to caramelize it.

Without stirring just allowed it to caramelize occasionally shaking the pan.

It goes very fast so i kept a close eye on it to avoid burning the sugar.

As soon as the sugar color became dark I poured the mushroom water very carefully into it. (watch out, sometimes the water can splash and burn the hand)

At this step, I used a spoon to stir the sauce very lightly. then cooked it for around 2 minutes on medium heat.

Added salt.

Then vinegar.

Stirring occasionally on medium heat until the sauce thickens.

When the consistency became like soy sauce (took 4 minutes) turned off the heat and let it cool down.

I got 125 ml sauce with a really good taste.

Filled a glass bottle
