Hello, friends, and community greetings. After seeing the post from dear friend stuffed-peppers-and-zuchin# recipe I remember during my travel to India. I made something similar but my Indian style. Using snake gourd. I was looking for those photos for a long time and finally, I found them and am happy to share my recipe here in the community.
In India where we live that place, locals grow their vegetables in the garden and they have their local vegetables. After a long time saw the snake gourd and I bought some of them. One recipe I already posted a long time ago #plantpower(vegan) community.
This is a very simple non-fried, healthy, and delicious recipe I knew from a young age.
Ingredients:
1 medium-sized snake gourd.
I cut it into 5 cm lengths in a cylindrical shape.
10 5cm sized snake gourd pieces cut like cylindrical shapes.
1 cooked potato
1 green paprika
1 small onion
10 green beans
1 carrot
1 Indian garlic bulb
3 cm ginger
hand full fresh coriander
1 tsp chili powder
1/2 tsp cumin powder
1 tsp garam masala
1 tsp salt
1 tsp coriander powder
1/2 tsp turmeric
2 tsp oil.
1 tbsp fresh coconut for garnish.
After cutting the gourd, remove the seeds from each piece.
And rub some salt inside it. And keep them aside. meanwhile, we make filling or stuffing.
Making stuffing
Chop all vegetables including garlic, ginger, and coriander.
Grate a potato and keep it aside.
In a frying pan add oil and put chopped garlic ginger.
As soon as the garlic becomes aromatic add all vegetables paprika, onion, green beans, and carrot.
Stir them nicely for 2 minutes
Sprinkle some lime juice around 1 tsp.
Add spices.
Add coriander saving a little for garnishing.
Add grated potato and stir it well.
Our filling is ready.
Fill stuffing inside the gourd cylinders.
I don't have a steamer so I make some arrangements for steaming food.
I used my chapati container which has holes for steam.
Layered banana leaf.
Arrange all filled snake gourd pieces.
cover the container.
and put it in the deep pan which has water and a rack to put the container.
Cook them for around 4-5 minutes. and they are ready to remove from heat.
Here are the stuffed snake gourd after cooking.
Eat them as is or use some chapati or any flatbread to eat together.
Garnish with coconut and coriander.
