Our Indian garden provides us with natural organic fruits and coconuts, which we use to make our daily meals. Sometimes, I make some experiments and create delicious dishes. This time, I made some pancakes that are completely non-traditional, incorporating coconut and fruits from our garden.
Now, let’s look at the recipe!
Ingredients:
1 cup fresh grated coconut
1 cup oatmeal
1 cup wholemeal flour
1/3 cup coconut oil
1/2 tsp salt
1/2 tsp baking powder
1 chikoo
3-4 bananas
1 starfruit
1/2 cup ginger jaggery syrup
2-3 tbsp chocolate syrup
Instructions:
Begin by grinding the fresh coconut with 1 cup of water to create a smooth paste.
Next, grind the oatmeal and mix it into the coconut paste thoroughly.
Add the wholemeal flour and salt to the mixture, and combine well.
Incorporate the coconut oil and gradually add more water until the batter reaches a desirable consistency.
Finally, mix in the baking powder. If the batter is too thick, add a little more water until it is the right consistency.
Heat a pan and brush it lightly with coconut oil. Pour in some batter to make pancakes.
Since ready-made syrup isn't commonly found in India, I made a ginger jaggery syrup by cooking jaggery with grated ginger.
First layer with chikoo slices and banana slices, drizzled with ginger sauce. Covered with another pancake layered with starfruit slices and banana slices.
Then one pancake on top
Layered with starfruit, banana, and chikoo slices. Drizzled ginger sauce.
Layered one more pancake.
And spread banana slices on top, finishing with homemade chocolate sauce. Enjoy!
They are delicious and had some tropical taste.
