Ingredients:
- 1 pineapple
- 1 cup of red onion finely chopped
- 4-5 jalapeño seeded and finely chopped
- 3 tablespoons of finely chopped cilantro
- 1 teaspoon of Himalayan pink salt
- 1 teaspoon of fresh cracked black pepper
- Tortilla chips for serving
Directions
1. Cut pineapple into small cubes, dice red onions and jalapeño. Finely chop cilantro.
2. In a large bowl, combine pineapple, red onions, jalapeño, and cilantro.
3. Season to taste with Himalayan pink salt and fresh cracked pepper. Allow flavors to blend at room temperature for 30 minutes, or chill until serving time.
Serve with tortilla chips.
