Ingredients:-
- 3 tbsp olive oil.
- 1 cup chopped onion.
- 3 clove gralic.
- 1 jalapeno pepper chopped.
- 1/2 tsp pepper flakes.
- 2 cup vegetable stock.
- 1 can roasted tomatoes.
- 1 jar salsa.
- 1/2 cup black beans.
- 3 cup shredded cooked chicken.
- 3 corn tortillas.
- some shredded cheddar cheese.
- some sliced jalapeno peppers.
Method:-
MAKES 5 SERVINGS.
Heat 1 tbsp olive oil in medium skillet. Add onion, garlic, chopped jalapeno and red pepper flakes saute until onion is translucent.
Transfer vegetable mixture to blender. Add vegetable stock, tomatoes salsa and black beans. Blend on speed until almost pureed.
Pour mixture into large saucepan. Bring to a simmer over medium heat, simmer 20 minutes.
Heat remaining 2 tbsp olive oil in heavy skillet. Add tortilla strips fry until crisp. Drain on paper towels until ready to use.
Silky Tortilla Soup is ready.
Ladle soup into five bowls. Top with shredded chicken, tortilla strips, cheddar cheese and sliced jalapenos.
