I now use the fish sauce with pretty much everything.
Before I found out about this sauce, I used to gag at the thought of it.... "rotting fish used to make a sauce, no ways". I couldn't have been more wrong, but this stuff is epic and especially in the stir-fry. The initial smell is pungent, but that quickly clears and the flavour it adds to the dish is incredible. It also adds a nice glistening sheen to the cooked food.
Last night I did a slow BBQ for the chicken thighs (marinated in fish sauce and vinegar) and rustled up a mega veggie stir fry using the sauce too.
It was delicious, so much so, I kept some for my breakfast this morning.
