🍴 COURGETTES NEST🍴
Ingredients
- 2 courgettes
- 3 eggs
- 8 cherry tomatoes
- 2 Paris mushrooms
- Chewy salad
- Grated Parmesan
- Balsamic vinegar
- Flour
- Oil for frying
- Salt and pepper
Preparation time: 15 minutes
Directions
STEP 1
Prepare 2 eggs.
Separate whites from yolks. Put the yolks in a small bowl, add in salt and cover them with the balsamic vinegar.
Set aside.
STEP 2
Prepare the courgettes.
Wash well. Cut off both ends. Cut lengthwise for about 0,20 inch then cut each slice into smaller slices to make tagliatelle pasta.
Set aside.
Prepare the salad and tomatoes.
Wash and spin the salad.
Wash the tomatoes and cut them in half.
Set aside.
Prepare the mushrooms.
Do not wash them. Wipe them well, cut off the tip of the foot and remove the skin. Cut into very thin strips.
Set aside.
STEP 3
Prepare two plates, one with flour, salt and the other one with the remaining egg yolk.
Dip the courgettes slices first in the egg and then in the flour.
STEP 4
Heat the oil and deep fry the courgettes in hot oil. Turn it over and let it turn golden brown.
Prepare a plate with paper towel.
Place the courgettes slices on the paper towel and season with salt and pepper.
Training
Arrange the courgettes in the centre of the plate like a bird's nest. Place salad, tomatoes, mushrooms and grated parmesan on both sides.
Collect the egg yolks from the vinegar (do not discard the vinegar!) and place them in the centre of the courgettes.
Drizzle the vinegar on the salad, salt, pepper and oil.
