Hello there steemit family! Today I wanted to share with you these recipes inspired by two of my favorite candy bars. Candy is not something we keep around the house, but from time to time we still get a sweet tooth. Sometimes you feel like a nut! So I wanted to make one inspired by the classic Almond Joy. Other times I want something a bit cooling, my second creation is inspired by York Peppermint Patties. I hope these recipes inspire you to try one or try both!
First you will need your ingredients
- 1/4 cup Shredded coconut (about another 1/2 cup for the coating)
- 1/4 cup chopped Lily's Dark Chocolate Chips
- 40 pitted and capped Medjool Dates (20 for each recipe)
- 1/4 cup sliced Almonds
- 1 tsp Coconut Oil
- 1 1/2 tsp Cocoa Powder (Set aside more in a small bowl or ziplock bag for dusting)
- 1/2 tsp Peppermint Extract
- 1/2 tsp Vanilla Extract
- 1 tsp Water
- Tools- You will need a food processor, a small scoop (or a spoon if you don't have one) the scoop I used made exactly 10 truffles per batch, a baking tray lined with parchment paper, and a small glass of water.
Let's start with the Peppermint Patties. Add to your food processor 20 Medjool dates, 1/2 tsp Peppermint Extract, 1 tsp water, 1 tsp Coconut oil, 1/4 cup Shredded Coconut flakes, 1 1/2 tsp Cocoa Powder, and 1/4 cup chopped Lily's Dark Chocolate Chips. Blend in food processor till it forms a smooth ball of dough.
For the Almond Joy Truffles add to your food processor 20 Medjool Dates, 1 tsp Water, 1 tsp Coconut Oil, 1/2 tsp Vanilla Extract, 1/4 cup shredded Coconut Flakes, 1/4 cup chopped Lily's Dark Chocolate Chips, 1/4 cup sliced Almonds, and 1 1/2 tsp Cocoa Powder. Blend in food processor till it forms a smooth ball of dough. It should look like this.
Place each ball of dough in its own bowl and chill in the refrigerator for about 5-10 minutes while you clean up and prepare for the final stages. Next grab your tray lined with parchment paper, scoop, cocoa powder dusting bowl, shredded coconut topping bowl, and a small glass of water. It occurred to me in the process that it could be just as easy to place your toppings in a Ziplock bag and shake the balls of truffle dough inside the bag. This could save you a lot of clean up if you choose to have little ones helping you with this process.
Next take your scoop and dip it into the glass of water, this will release the dough from the scoop and help the toppings stick better to the truffle. It will make for easy clean up as well. Form each set of the dough into ten equal size balls.
Dust the Peppermint Patty Truffles with Cocoa Powder by rolling them in the bowl or use the Ziplock shake method.
Roll the Almond Joy mixture into a small bowl with Shredded Coconut Flakes or use Ziplock shake method.
Place the coated and topped truffles on the lined tray and freeze for 15 minutes. Then enjoy!
If these tasty treats survive the first night of your house, place them in an air tight glass container in the freezer for whenever your sweet tooth starts calling.
