Procedimiento / Process
Paso 1:
Se corta en trozos pequeños: la cebolla, los tomates , 10 aceitunas, 4 cucharadas de encurtidos y 3 cucharadas de alcaparras.

Paso 2:
Se mezclan todo en un bol y se le agrega las especias: oregano, ajo, perejil.
Se le perfora al pollo con el cuchillo tanto en la pechuga como en la parte trasera y los muslo.
Se agrega sal generosamente por dentro del pollo y por la parte exterior.
Luego se rellena con la mezcla prerada anteriormente

Paso 3:
Una vez relleno, se cierra con un palillo grande.
Luego se agrega adicionalmente las especias por la externa frontal y posterior del pollo.
En una bandeja previamente untada con mantequilla se coloca el pollo y se cubre con papel de aluminio, procurando que quede totalmente hermético.

Paso 4:
Se precalienta el horno a 200°C por 10 minutos y se introduce el pollo por 1 hora y media.
La cocción debe ser revisada cada 30 minutos, en la última hora debe verificarse que se ha alcanzado la cocción por la parte interior con un cuchillo.
Una vez verificado esto, se retira el papel de aluminio y se deja dorar por cambos lado, bañandolo ocasionalmente con el liquido sobrante en la bandeja y vino blanco.
Luego de terminado el tiempo completo de cocción se retira del horno y se corta para servir al gusto.

Preheat oven to 200oC for 10 minutes and chicken is introduced for 1 hour and a half.
