Lamb Kebab with Mango, Beet, and Feta in Homemade Pita Bread
Ingredients
- Grilled chunks of lamb, marinated overnight in a combination of olive oil, vinegar, and oregano, rosemary, and thyme from the garden
- Finely shredded beets from the garden, splashed with lemon juice and olive oil
- Feta cheese
- Mint leaves from the garden
- Ripe mango, cut into long thin strips
- Adventure

I'll make a post soon about the homemade pita breads - I used olive oil that I infused with garlic and rosemary overnight, which makes the entire pita carry those flavors. The lamb pieces are from a whole leg of lamb that I butchered up into kebab sized chunks, skewered, and grilled outside. The beets and mint were pulled up from the garden the same morning. This sandwich has a great balance of tangy feta, sweetness from the mango, and earthiness from the beets, with the freshness of mint and big meaty chunks of lamb. The chewy, still-warm pita pockets just put this sandwich over the top.
Oh darn! It looks like I just missed the cut off for the contest! Oh well, better late than never right?
