My daughter and I made this beautiful rainbow jell-o cake a couple of years ago. The process is a bit tedious (probably why I have not attempted to make this again) but the end result is sooo worth it. We brought it to a pot-luck gathering and it was definitely a hit. So today I want to share how we made it in case you want to try for yourself :)
So here's what you'll need:
a bundt pan
non-stick baking spray
one 3 oz Jell-O package of each color (red, orange, yellow, green, blue, purple)
two 8 oz package unflavored gelatin
one large cup of vanilla yogurt or a large can of condensed milk
Step 1
Spray your bundt pan with the non-stick baking spray.
Step 2
In a mixing bowl, pour in one purple jell-o packet and one clear gelatin packet.
Step 3
Add 1 and 1/4 cup of boiling water and mix continuously for 1-2 minutes.
Step 4
Pour in HALF of the jello mixture into the greased pan.
Step 5
Place the pan in the fridge for about 18 minutes.
Step 6
Add 2 tablespoonful of vanilla yogurt into the remaining half of the jello mixture and mix thoroughly for 1 or 2 minutes.
Step 7
Take out the pan from the fridge, and gently touch the jello with your index finger to make sure it has settled.
Step 8
Pour in the creamed jello over the first layer and place it back in the fridge for another 18 minutes.
Step 9
Repeat Steps 2-8 for the remaining colors. Order should be:
PURPLE
BLUE
GREEN
YELLOW
ORANGE
RED
STEP 10
Place the serving dish over the pan, turn it upside down, slowly remove the pan and ENJOY your Rainbow Jell-O cake!
