TURKEY AND ROOT VEGETABLE PIE

A hearty, wholesome recipe - great for limited time and hungry bellies.
INGREDIENTS
4 cups of turkey mince
1 beetroot – grated
2 carrots – grated
1 cup of bacon – chopped
3 garlic cloves – sliced
1 brown onion – chopped
1 tablespoon of olive oil
2 tablespoons of butter
3 cups of parsnip – cubed
METHOD
Steam your parsnip until tender.
Blitz in a food processor with butter until creamy.
In a frypan, over a high flame, heat oil and cook bacon until golden.
Add garlic and onion to it, and cook till tender.
Place mince in and cook till browned.
Beetroot and carrot go in with salt and pepper to season.
Pour your mince mix into an ovenproof dish.
Spoon parsnip mash over the top.
Place it under the grill till golden.
