This recipe is not a copy/paste recipe, It's a recipe inherited and improved upon over many many years.
Ingredients:
2 cans of 15.5 Oz Chick Peas
1 teaspoon Baking Soda
- 4 table spoons of Tahina Sauce ( Sesame seeds sauce)
- 1 Lemon Juiced and drained
- 1 teaspoon of salt (kosher or regular salt)
You will also need a saucepan to boil the chick Peas and any counter-top Food Processor:
Preparation:
Empty contents of the two Chick Peas cans into the saucepan, add 1 teaspoon of baking soda and mix well.
Add 2 cups of water and Put the saucepan on medium fire for about 45 minutes, till the Peas are soft and can be crushed with fingers without any resistance.
When the peas are ready drain well and put in the counter top food processor/mixer and add the rest of the ingredients, mix on high for a few minutes adding 1 ice cube every 30 seconds till the mix is white and soft.
Do not add more than a dozen ice cubes.
Taste the soft mix with a small spoon, add more lemon juice if needed. (According to taste)
Empty the contents in a glass plate and top with some olive oil, paprika, fresh parsley, or freshly sliced pickles.
These toppings are not essential, you can add any topping you like. I add cayenne pepper to mine.
You can store your Hummus up-to five days in the fridge inside a sealed plastic container. If you are planning to eat it all the same day, you can add 1 clove of garlic to the ingredients, do not add the garlic if you plan to store it in the fridge.
