It's been months since I've cooked Nigerian jollof and Nigerian fried rice, the truth is since I have traveled to serve my fatherland I haven't had a good taste of my precious Nigerian Jollof and fried rice, and I am determined to make them ones I'm back and settled down .when ever I go on youtube there are always video suggestions on these foods, more precisely Nigerian Jollof.
Today is a very bright and beautiful day, I am filled with enough energy and I started making preparations how to cook my delicious meal for breakfast, I woke up at about 7:15 am, brushed my teeth, took my bath, dressed up and headed for the market to get my ingredients, on my way to the market it started raining heavily and I couldn't trek to the junction just for exercise as earlier planned by me, I boarded a tricycle because it has a better shade and will protect me from the rain and off I went to the market. It was a very rough time at the market as the rain had made everywhere messy, I struggled to walk through and get whatever thing I wanted to get, and by the time I was done I was as weak as anything you could think of, going home I bumped into a friend and we had to look for a place to sit and discuss old times, when we were done gisting we finally bade goodbyes.
Hi family by the time I got home, it was around 12 or thereabout, and I was seriously stressed and decided to take a nap, I woke up at 4:15 pm and I was feeling so hungry, I had some snacks and by this time the plan has changed from making Jollof and fried rice for breakfast to dinner.

Ingredients needed for Nigerian Jollof rice
Chicken
Water
Rice
Groundnut oil
Onions
Tin tomatoes
White pepper
Rosemary
Curry
Thyme
Bay leaf
Cube seasoning and
Salt
FOR THE PEPPER MIX I USED
Shombo(cayenne pepper )
Tata she (red bell pepper)
Rodo (Red habanero )
Fresh tomatoes, garlic, and onions, for the pepper mix I roast them in the oven till it's dry for bitter burnt jollof flavor before proceeding to blend them
Steps in preparing
Marinate you chicken and allow it to rest for a while
Pour it into a pot and allow it to boil with its own juice until it's soft, if it's juice doesn't cook it well, you can add the desired quantity of water until its tender after that
Set your boiled chicken aside
Bring out your frying pan,heat your oil,add one bulb of onion for flavor and fry your chicken to your desired taste (I prefer mine brown and crispy )seperate your fried chicken from the oil then drain the shaft from the oil.NOW the real task begins
Place your cooking pot on fire and add the oil you used in frying after this add your sliced onions, Tin tomatoes, white pepper, seasoning cube, salt, curry, thyme, rose Mary, and bay leaf into the frying oil after this process then you add your pepper mix. allow it to fry for a while and by this time you will start perceiving the sweet aroma. After this process is done, you proceed to add your rice to your mixture, allow it to fry for a while, and add the chicken stock you got from boiling your chicken, cover the pot firmly to cook the rice to your desired texture, and you can as well add a little bit of water if necessary and extra seasoning if needed for a better taste,Avoila Your Nigerian jollof rice is ready to be served.
FOR THE FRIED RICE
in this 21st century I don’t see a reason to add coloring to your Nigerian fried rice ,when you can simply use natural ingredients ,follow me on ingredients and step to take in making this delicious dish
INGREDIENTS
green beans
Peas
Green bell pepper
Sweet corn
Spring onions
Green Rodo (Green habanero )
Carrot
Onions
PROCESS
Blend your green bell pepper, spring onions, and green habanero and set aside.
In a pot add your chicken stock and put your desired quantity of neatly washed rice and stir. after this add your freshly blended greens and stir properly, then add a little water to parboil. after this process set your parboiled rice aside
NEXT STEP
Add oil to the pot to fry your veggies , add your seasoning cube and salt to taste , and go on by adding your rice bit by bit .this is fried rice so you have to allow it to fry properly, by doing this your fried rice won't get spoilt quickly and that it your friend rice is ready, as simple as you can ever imagine.
SALAD
For the side, I added salad , it's a mixture of cucumber, carrot, cabbage, sweet corn, and cream.
