Every weekend, I love to cook or bake something new. So today I'm going to share my own "orange coconut cheesecake mini muffins" recipe.
Its pretty simple and it's perfect for breakfast or brunch.
Prep Time: 20 minutes
Baking Time: 30minutes
Total Time: 50minutes
Serving: 6 muffins
Ingredients
40g cream cheese (softened)
2 large eggs
1/2 cup orange juice
2 teaspoon coconut oil
1/4 cup sour cream (or yogurt)
1/2 teaspoon vanilla
6 tablespoons sugar
250g flour
For the topping (optional) : shredded coconut or orange zest
Procedures
Preheat the oven to 220 degrees F
In a medium bowl or the bowl of a stand mixer, mix sugar, flour, and cream cheese until smooth. Beat in the eggs, then add the coconut milk, sour cream, coconut extract, and vanilla, and mix until smooth.
Divide the filling evenly between the muffin cups, filling nearly to the top.
Bake for 30 minutes, or until just slightly jiggly in the center. Insert a toothpick in the center for few seconds & when it comes out clean, you know it's done.
Remove and let cool at room temperature for 30 minutes.
