My every day snack right here. Homemade granola bars that fill your body with goodness.
These are based on the more chocolatey version, but this week I wanted seeds in my everything.
Adding seeds to breads, smoothies, puddings, and breakfast oats just makes everything better. I swear!
They taste delicious!
I sweetened them with pitted dates, maple syrup and almond butter. It’s a combination that’s dangerous and drinkable, but pure sweet perfection.
Good thing these babies come together in less than an hour!!

Homemade Granola Bars
1 1/2 cups rolled oats (gluten-free if desired)
1 cup packed pitted dates
1/4 cup raw pecan halves
1/4 cup maple syrup (or honey)
1/4 cup smooth almond butter
1/4 cup whole raw almonds
1 tablespoon flax seeds
2 tablespoons sunflower seeds
2 tablespoons chia seeds
2 pumpkin seeds
2 tablespoons hemp seeds
1 teaspoon cinnamon
1/2 tsp sea salt
Preheat oven to 350 F.
Spread rolled oats on a baking sheet evenly. Pop them in the oven to toast until the oats become fragrant, for about ten minutes. In the middle of baking shake the baking sheet once. Transfer the oats to a large mixing bowl when they're done. Set aside.
Line a baking pan with parchment. Add dates in a food processor, pulse until a ball is formed. Then transfer dates the mixing bowl with the toasted oats, the seeds, the nuts, salt and cinnamon. Stir well with a wooden spoon.
Over medium heat bring maple syrup (or honey) and almond butter to a boil. Then pour over the dry ingredients. Stir everything together, making sure all ingredients are well mixed.
Place mixture in your prepared pan. Then with a spatula press into the pan. Cover with a plastic wrap, and pop them into the freezer to set for 10-15 minutes.
