May be, you have tried at home to bake some pizza and you never get the same results or at least a decent one that satisfiy your hunger and intentions. May be your pizza comes out of the oven all drenched and wet or it never lifts enough. There's a reason why it happens. A home traditional oven is not intended to bake pizzas and the temperatures it reaches are never high enough as a pizza oven's.
Well... don't get disappointed. There's a little trick that I'm going to teach you in order to achieve a real good and tasty made at home pizza.
In this ocassion I'm baking mini pizzas and the ingredients you can pour on them are up to your election, thus I'll give you only the dough recipe and the rest of it goes to your imagination.
INGREDIENTS
500 grams of all purpose flour
1 cup of lukewarm water
1 tablespoon of sugar
1/2 tablespoon of salt
1 tablespoon of vegetable oil
1/2 tablespoon of yeast
Put together every ingredient but salt and the half of water in a bowl. Start pouring the flour, spoon by spoon alternating with the rest of water while mixing. Now you can pour the salt, why? because in some cases the salt is too strong for the yeast and the reaction we need from the yeast doesn't occur. Keep mixing and pouring until you get a non-sticky dough and knead for five minutes. Let it rest for 10 minutes, covered with a dishcloth. remove the dishcloth and start flattening with a rolling pin. Once you have flattened to 4mm thick, with a 5" cutting ring, make as many circles as you can. Do not waste the remaining dough, repeat the process until you finish the whole dough. Put them in a metal tray and prick them with fork.
Take two or three tomatoes to a blender and process them, boil with a little salt and sugar, oregano and basil until it gets the consistency of sauce. Now pay attention please, here comes the firs trick. We are going to bake them twice. Paint the dough circles with a very little bit of sauce as you see in the picture and take them to a preheated to the maxim oven for only 5 (five) minutes.
When you get them out of the oven, they gotta look like this. The sauce got to be dried and the dough lifted. Until here, we have the first baking process. Remember, only with a very little sauce.
Shred mozzarella cheese, add more sauce to the already baked pizza and put the shredded cheese on it, add any other ingredient you like and now we take them to the oven for the second time. That's the secret to get real good made at home pizzas with a conventional home oven. At this stage, you can take them to the fridge and freeze them for later. Then you'll only have to bake for the second time whenever you want to eat some.
