Ramadhan is still a month away but my tongue can't wait for such a creamy sweet coconut milk soup. Cooked with pumpkin and enau fruits , Kolak is one of my favorite. Enjoying this sweet soup with a bowl of glutinous rice just goes perfect. Join me!
This creamy soup is one of most wanted list menu for breakfasting during fasting month. So, no wonder a lot of people is looking for Kolak in Ramadhan bazar.
I made my own Kolak this time. I combined pumpkin, durian and enau fruits.
Ingredients:
- Glutinous rice
- Pumpkin
- Durian
- Enau fruits
- Coconut milk
- Sugar
- Salt
- Pandan leaf
Instructions:
- Steam glutinous rice
- Cut pumpkin and wash the enau fruits
- Cooked coconut milk and pumpkin, enau fruits and pandan leaf (must stirring during whole cooking process).
- Add in salt, keep stirring until gets soft.
- Add in durian and sugar.
- Turn off the heat in the first shimmering time.
- Serve.
So yummy, so creamy.
