As promised in my previous post I have now started making stuff with my lingonberries.
First out is something simple: Lingonberry-juice.
To make what I made you need:
- Lingonberries (photo above shows about 1 liter).
- A big pot.
- A few clean and re-seal able bottles, preferably of glass like shown above.
- Some organic honey (much healthier than refined sugar, and necessary as sweetener in anything made from a sour berry like lingonberries.)
- A teaspoon of salt (adds to the flavor).
- A wooden ladle.
- A sieve
- A funnel.
After washing the berries and the bottles I added the berries to the big pot.
I then measured the amount of water I needed to add by using the bottles.
Next is the boiling:
I used a wooden ladle to crush/squeeze the berries as they boiled, making sure to extract the maximum amount of juice.
I then added the salt and the honey gradually, while using a teaspoon to taste it to make sure the amounts are right.
ProTip: you need a lot of honey/sugar. It is like making lemonade..
5-10 minutes of boiling is enough.
Properly made lingonberry-juice is very tasty and healthy.
Lingonberries contains a lot of anti-oxidants, vitamin C and A, some healthy fats, and potassium.
