Finally a recipe :)
It's been a minute since I posted a recipe, I bet all ya'll missed my food posts :D! Anyways, I didn't have groceries to really cook something at home lately and I was preoccupied with the black and white challenge for the last like 7 days, today is actually supposed to be my last day, almost there!
I think sirniki or syrniki, whatever you wanna spell are one of my favorite Russian breakfast dishes, even though blini (crepes) are delicious these guys are phenomenal haha. Let's get to it.
Ingredients:
- 1 egg;
- 2 cups cottage cheese;
- 4-5 tablespoons flour;
- 1 tablespoon honey;
- half a teaspoon baking powder;
- half a teaspoon vanilla extract;
- oil for frying;
- extra flour for coating.
The regular cottage cheese you would be in the US is kinda soggy and watery so I encourage everyone who is going to make this pay a visit to a Russian grocery for a box of proper cottage cheese. It has more dry and sticky texture.
Directions:
Let your cat smell the cottage cheese.
Combine all of the ingredients in a mixing bowl, scoop about a tablespoon of cottage cheese mixture and coat it in additional flour.
Fry on a medium-high heat until both sides are golden brown and cooked thoroughly.

Top sirniki with sour cream, homemade strawberry jam, maple syrup or honey, feel free to garnish with roasted nuts, fresh fruit or whatever you prefer.
I used Icelandic Skyr - a thick type of yogurt and some whole strawberry syrup I have made last summer.
