We have a nice family tradition - I cook crepes every Saturday and Sunday morning (not really morning, today it has started at 12 pm hehehe). But the problem is that my husband has a Lactose intolerance. So I was looking for a good recipe which didn't include cow/sheep milk in it and tested different proportions of ingredients. Finally, a good recipe was found.
This recipe is super duper healthy and it works for those who want to enjoy crepes but stay away from gluten and dairy. So you just need to replace a regular white flour with coconut flour and cow milk with coconut one. Let me share my recipe with you, guys.
Ingredients:
- 1 1/2 Cups of Coconut Milk
- 1 Cup of Coconut Flour
- 1 Egg
- 1 tablespoon of maple syrup
- 1 teaspoon of vanilla extract
- 1 pinch of salt
- 2 tablespoons of coconut oil
- any stuffings you want
Instructions:
- In a mixing bowl, add the egg, maple syrup, salt and vanilla extract, then mix together.
- Add Coconut Milk and flour in the mixing bowl and mix together again.
- Then gradually add in the flour. Mix well.
- Place the frying pan for crepes on medium heat and warm it up with a dab of coconut oil to prevent the crepes from sticking.
- Pour a large spoon into the centre of the pan of the mixture, and then move the pan in a circular motion to spread the mixture out.
- Cook each side until golden brown.

My husband breakfast was served with a sunny side egg on the top of the crepes, which were stuffed by dairy-free cheese.
Also, we can stack of the crepes to eat it with jams, honey or anything else.
As you see, the recipe is super easy. It took me 20 mins to make about 10 crepes which are more than enough for breakfast for two people.
