Usually, when you hear the word "cheesecake" you can imagine the guilty pleasure - rich and high in the fat cake, which is super delicious but not healthy at all and doesn't work for the everyday diet. Today I wanna share with you recipe of Russian style cheesecake - you would be surprised how tasty is it and super healthy at the same time. You can eat as much as you can and don't feel guilty!
Ingredients:
Cottage cheese (can be replaced with ricotta cheese) - 1 lb
2 whole eggs
4 tablespoons sugar
pinch of salt
1/2 teaspoon vanilla extract
2 tablespoons of semolina
Instructions
- Mix all ingredients together (you can use the food processor).
- Place the filling a parchment-lined or greased pan.
- Heat oven to 350 F. Bake 60 to 75 minutes or until the surface of the cheesecake would be golden brown.
- Remove from oven and cool.
- Serve with jam or sweetened condensed milk (classic!)
