Hello my Dearest Foodies,
As I mentioned many times before, baking is not my strong suit, but I keep trying, lol. Well, my goal is to create few healthy spelt desserts and also, my younger daughter does not like raw desserts. At this time I made PEACH GALLET specially for her, because last week was her Birthday.
Anyway, I had this recipe in mind for a while and I though I should handle it quite easily. Oh boy, was I wrong, lol. Of course I made couple of mistakes along the way and my beautiful gallet almost fell apart 😂 Luckily, I was able to save it, but it turned out little bit more rustic than I anticipated 😂
Nevertheless, don't worry, if you follow the recipe you will not have such a problem. Otherwise, the taste is absolutely scrumptious and it makes up for the looks, so I will be making this yummy dessert again for sure. It can be made with other fruits too, such as strawberries, rhubarb, plumbs, apples and pears 🍓🍐🍎
RUSTIC PEACH GALLET
Spelt Gallet with Peaches & Blackberries
Vegan – Refined Sugar Free

INGREDIENTS
• Whole grain spelt flour 1 ½ cup
• Vegan butter ½ cup cooled (I use Earth Balance)
• Raw coconut sugar 1/3 cup (for the dough)
• Pure vanilla extract 1 tsp
• Pinch of pink salt
• Vegan 1 egg replacement
• Ice cold water 1 tbs
• Peaches 5 small (sliced)
• Xylitol or coconut sugar for the peaches 1 tbs
• Blackberries ½ cup (cut in halves)
• Baking sheet
• Parchment paper
• Rolling pin
PROCESS
• Prepare your egg in a small dish by following the instructions on the box.
• Place all the ingredients except water and egg replacement into a food processor and start pressing the pulse button.
• Continue full speed until it looks like breadcrumbs.
• Add the egg replacement and blend again, until you see farming a ball. You may add 1 tbs Ice cold water if need it. But only if the dough does not form the ball after you add the egg replacement.
• Remove the dough and create nice ball.
• Wrap it in a plastic wrap and place it in a refrigerator for 30 minutes.
• When ready, line your working surface with parchment paper and place the dough in the centre.
• Start rolling with rolling pin by adding little bit of flour to prevent for sticking.
• Apply another sheet on top and keep rolling until you create about 13inch diam circle; it doesn’t have to be perfect.
• Preheat the oven to 400F.
• Before you remove the parchment paper top layer, place the dough into a freezer for 10 min and remove the paper after.
• Start applying your peach slices by creating circles, leaving 2inches from the edge; again, it doesn’t have to be perfect.
• Sprinkle with sugar and fold over the edge by the help of the layer of parchment paper underneath.
• Add the blackberry halves and carefully transfer your gallet onto baking sheet with the parchment paper.
• Place into oven and bake for 15min then reduce the heat to 350F and bake for another 30min.
