Sweet potatoes go with lots of things and artichokes are one of them. If you have not tried this combination yet then please do and you will love it, I guarantee. This was just too delicious and the presentation can be also very impressive, especially if you are expecting guests. Although, even if you are just making quick dinner for your loved ones, that is perfectly fine too. This is a very easy, highly nutritious and satisfying meal for any occasion.
SWEET POTATO DINNER
Baked Sweet Potato stuffed with Garbanzo, served with Roasted Artichokes
Vegan – Gluten Free

INGREDIENTS for 2
• Sweet potatoes 2 medium size
• Canned garbanzo 540ml
• Turmeric 1tsp
• Red paprika 1 tsp
• Garlic powder 1tsp
• Smoke liquid 1 tsp
• Black pepper to taste
• Cayenne pepper to taste
• Himalayan pink salt to taste
• Oil
• Fresh herbs to garnish such as oregano, sage and Italian parsley
PROCESS
• Preheat the oven to 400F.
• Make an incision on top of your potato and bake for 40min.
• In a bowl, toss garbanzo with all the spices, garlic, smoke liquid, pink salt & few drops of olive oil and roast for 15min.
• When ready, you may scoop some of the potato flesh to make room.
• Fill the potato with garbanzo, drizzle with creamy sauce and garnish with fresh herbs.
DRESSING
• Cashews ¼ cup (presoaked for 6 hours and drained)
• Juice from one lemon
• Garlic powder to taste
• Nutritional yeast 1tbs
• Himalayan Pink Salt to taste
• Water ¼ cup (or more if needed)
• Blend all in a blender until smooth
ITALIAN STYLE ARTICHOKES
Oven roasted Artichokes with Vegan Parmesan
Vegan – Gluten Fee
INGREDIENTS
• Large artichokes 4
• Garlic cloves 2 cut in half
• Himalayan pink salt to taste
• Oil
PROCESS
• Cut the top and the bottom of each artichoke.
• Steam for 20min.
• When ready, let cool down for 10min.
• Preheat the oven to 425F.
• Place the artichokes onto pan lined with paper.
• Spread each artichoke gently with your fingers.
• With knife made an incision in the middle to place garlic clove halves.
• Add salt & few drops of oil in the middle.
• Lightly apply oil around each artichoke with brush or your fingers.
• Roast for 10min.
• When ready, set the oven on broil for 5 min.
• Serve with Vegan Parmesan.
VEGAN PARMESAN
• ½ cup cashew nuts
• ¼ cup nutritional yeast
• 1tsp garlic powder
• Himalayan pink salt to taste
• Grind all ingredients in a food processor by pressing pulse.
