Hi Everyone!
The recipe I'm sharing with you today for Tasty Tuesdays is a really unique one because I am using purple potatoes in it! 💜
I wanted to share this new experience I've had with you and hear your thoughts on it!

I found the potatoes at a international farmers market that I live near by, and I encourage you to seek out a few that are near you because there are SO many vegetables, fruits, and foods from all around the world! 🍒 🍈 🌎
Purple Potato Salad Recipe:
Ingredients:
- 6 medium sized purple (or red, white, or yellow potatoes) potatoes
- 1 1/2 cup mayonnaise
- 1 tablespoon white vinegar
- 1 tablespoon yellow mustard
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 small purple onion (going with the purple color theme here 😉)
- Paprika or Cayenne pepper to taste
Instructions:
Place potatoes in a saucepan and add enough water to cover potatoes. Boil for approximately 20-25 minutes, or until tender.
Mix mayonnaise, vinegar, mustard, salt, and pepper in a large bowl.
Add potatoes and onion, then lightly toss and gently stir until mixed.
Sprinkle with paprika or cayenne pepper and refrigerate for 2-3 hours to blend the flavors and chill.
