Mama's been having a real busy time at her little Lily's Cottage of late, this time it's full-house with students requiring breakfasts and dinners. Fortunately they are super considerate guests, probably been given the riot act by their companies who are paying for their training and accommodation, but it still is a lot of work :)
Mama however has not forgotten her promise to share some of her budget beaters with you; this time one of her favourites, a tasty Fish & Mushroom Pie.
Ingredients required: 4 pieces of Hake, Spring Onions, Mushrooms, Potatoes, Yogurt, Milk, Cheese, Butter & Cornflour (Yielded four servings)
Potatoes were put on the boil to make creamy fluffy mashed potatoes with loads of butter and milk.
Fish was cooked in a little water with some herbs, to be flaked for the pie.
Dice Spring Onions and sautee in butter.
Add sliced Mushrooms and sautee some more.
Add about 3/4 cup of natural yogurt.
Thicken with cornflour and season to taste.
Spoon into pie dish.
Add flaked fish.
Sprinkle with grated cheese.
Top with creamy mashed Potatoes.
Dot with butter.
Score top of mashed Potatoes with a fork to evenly distribute the butter and make a pretty pattern.
Note - you can grill it in oven as is, or add cheese like Mama did, as she loves grilled cheese :)
Delicious grilled cheesy topping.
Papa, Mama & Granny Bear all went to bed that night with happy tummies as Fish Pie and veggies is a firm favourite meal in the household :)
