So here we are already at week #50 - I would love to know just how many sandwiches have been made in total for SSC! I only started on Week #19 and have made quite a number of sandwiches here already!
Happy 50th ! We can pretend this is a half century, but of course it's actually almost a year; just two more weeks to go to reach the one year mark!
A big congratulations to you , this is amazing and you've done this mostly on your own with the occasional help from sponsors; this really is an achievement in an era where things come and go at the blink of an eyelid!

Back to SSC Week 50; I'm making a Creamy Peppers & Corn Sesame Crusted Baked Roll - Hollowed out Sesame Seed Bread Roll, filled with Red & Green Bell Peppers & Corn, creamy Balsamic & Onion Sour Cream Dip and Cheddar Cheese, baked till crispy and melted.
INGREDIENTS
- Sesame Seed Roll
- Yellow & Green Bell Peppers - diced
- Corn
- Cheddar Cheese - grated
- Balsamic & Onion dip mixed with Sour Cream
Firstly hollow out the roll, and sautee veggies in a little butter, drain the liquid - you really don't want a soggy bottom now do you!
Fill roll with veggies.
Top with generous blobs of Balsamic & Onion dipping sauce.
Load the roll with grated Cheddar Cheese.
Extra dipping sauce on top - nothing wrong with being a glutton with that deliciousness!
Bake in a hot oven for just under 10 minutes, then grill to brown topping.
