Steemit Sandwich Contest Week #58 - Stuffed Avocado & Smoked Beef Sandwich

So there we were having a true blue Monday as far as Steemit is concerned, and I hope I'm not too late, it's already Tuesday here in South Africa and I'm trying to post the sandwich I made yesterday!

Nothing like a good old sandwich to calm the frayed nerves and still the shouts from the hungry beasties lurking inside me! Hubby can’t understand why I’m so irritated, but of course it’s because I can’t feed my Steemit addiction, so the sandwich will hopefully change things and I’d really like to post it but this postal service was still down last night at bedtime, so who knows what the sandwich will look like by the time it arrives at Steemit!

Back to my sandwich - I need to make something different and a little crazy to get my mind off my dilemma, but not that many options with Avocado and Smoked Beef.

I’ve always wanted to stuff an Avocado but how to serve it?

Ok, we love our Bunny Chows here in Durban, I’ve told you about those many times before - a hollowed out loaf of bread filled with spicy hot Curry - so why not hollow out the Bread Roll to house the stuffed Avocado? Would be quite a surprise for hubby to find an Avocado hidden inside his Bread Roll - he loves his Avo’s and I have to make up for my grumpiness somehow!

All I had on hand that could work was:

• Wholewheat Bread Roll
• Avocado
• Smoked Beef
• Horseradish
• Cottage Cheese
• Cheddar Cheese Spread

First things first - hollow out Bread Roll

Spread a layer of Cheese Spread inside the hollow

Line the Roll with Smoked Beef

Spread a layer of Horseradish on top of Beef

Halve Avocado, peel it & remove pip; place inside Bread Roll & fill with Cottage Cheese

Join the Bread Roll halves again and no one will guess that you have a whole Avocado inside

Cut in half and serve your rich and creamy and delicious summery Avo & Smoked Beef Sandwich
