What to make for lunch with the leftover Lemon & Herb Roast Chicken?
Can't make a regular carb-loaded Chicken & Mayo Sandwich for the Keto only Husband and I really did not feel like making another Keto friendly waffle to use as a Sandwich base, but I had a gorgeous crisp lettuce in the refrigerator so I think it's time for a Chicken Lettuce Wrap.
Hubby's really done well by sticking to the Keto diet and is no longer sporting what we call a Beer Boep here in South Africa; the pot belly has all but disappeared, super proud of him!
A Chicken & Salad Lettuce Wrap that contains very little to no Carbs but has some fat in the form of crispy Chicken skin, Full fat Cream Cheese as well as roasted Sunflower Seeds will do perfectly well for a lunchtime sandwich.
INGREDIENTS
Lettuce leaves
Cucumber thinly sliced
Carved Chicken + crispy skin
Full fat Cream Cheese
Roasted Salted Sunflower & Cumin Seeds
Gherkins thinly sliced
Baby Italian Tomatoes halved
Rocket Microgreens
French Chives
On to the assembly line:
Use the strongest Lettuce leaf as the sandwich base - Cucumber slices are first in line.
Carved Chicken is next on to the scene, with generous blobs of Cream Cheese.
And then the crispy Chicken skin, followed by crunchy roasted Sunflower & Cumin Seeds.
Lastly the sliced Gherkin for a little tang and halved Tomatoes to add a little colour and sweetness.
A sprinkling of Rocket Microgreens for extra tang.
Sealed with another lettuce leaf...and we're all done :)
