Hey guys, today is a very happy day for me- I successfully veganised one of my all- time favourite foods- macaroni cheese!
The result was cheesy, creamy and delicious and best of all completely plant based π
Most recipes I have come across for vegan Mac 'n Cheese have used nutritional yeast. This is something I usually have in the house but I just recently ran out.
Not deterred by that fact, and heart set on making it anyway, I improvised with some alternative ingredients and oh my did it pay off!
Here's what you'll need to serve 2:
- 1 red onion
- 200g small penne/ macaroni
- 400ml oat milk
- 3 tbsp vegan butter
- 1/2 cup flour
- 1 tsp English mustard
- 1 clove of garlic
- 100g vegan cheese, grated
- 2 tbs vegan cream cheese
- 2 tbs breadcrumbs
- garlic salt
- salt and pepper
Method:
Preheat your oven to 200c.
Cook the pasta in salted boiling water.
Grate the vegan cheese.
Peel the onion and cut it in half.
Add it to a small pan with the milk.
Heat on a medium heat until it boils.
Remove from heat and remove and discard the onion.
Set the milk to one side.
Melt the butter in a separate pan and slowly add the flour, mixing into a paste.
Add the milk bit by bit, stirring well until smooth. Add a little more flour if the consistency is too runny.
Add the clove of crushed garlic, garlic salt, mustard and some salt and pepper.
Add the cream cheese and 2/3 of the grated cheese.
Drain the pasta and add to the cheese sauce.
Mix well until the pasta is well coated and transfer into an oven dish.
- Sprinkle the rest of the cheese on, then a layer of breadcrumbs.
- Put the dish in the oven and cook for approx. 10 minutes or until the cheese bubbles and turns golden brown.
Voila!
Perfectly cheesy, creamy Mac 'n cheese thatβs crispy on top- made with no animal products whatsoever π
I'm so happy I discovered a way to make a yummy vegan version of this, it'll definitely become a regular meal for me!
