Hi friends! Today's post is my submission for 's #steemitsandwichcontest, one of my favourite healthy sandwiches- because I can't eat burgers every day (sadly!)
As always, it is really easy to make, and probably contains ingredients you will already have in your kitchen, including hummus- a staple of every vegetarian's diet and an important source of protein.
So let's get on with it :)
Ingredients:
3 tbs hummus
1/2 red onion, chopped
2 slices of whole wheat bread
1 small tomato, sliced
A small handful of spinach
4-5 thick slices of cucumber
Black pepper
Instructions:
-Chop the onion and slice the tomato and cucumber.
-Spread a thick layer of hummus onto each slice of bread.
-Grind some black pepper over the hummus.
- Spread the red onion evenly over one piece of the bread, and spinach on the other half.
- Then layer the tomato and cucumber.
- Assemble the sandwich and cut diagonally.
And there you have it, a delicious and nutritious lunch that provides you with a healthy dose of plant based protein, iron and vitamins.
