Creamy and super tasty fava, tender with unique flavor octopus and incredibly easy, with aromatic herbs, baby potatoes are perfect for side dishes or as a main course! To serve, simply, dress with extra virgin oil and use coarse sea salt, herbs, onions, tomatoes (I used my first juicy tomatoes from my garden), salty caper, aromatic lemons and something chiiled to drink! Sometimes, that's all we need..
FAVA RECIPE
ingredients:
-2 carrots
-1 big onion (plus one per serving)
-250g yellow split peas (fava)
-2 cloves of garlic
-olive oil
-salt
-pepper
-a pinch of sugar
-lemon zest
-lemon juice
-2-3 bay leaves
-tomatoes (for serving)
-caper (for serving)
method:
-put the fava into a bowl and add boiling water and let aside, until the water turns brown
-drain
-place a pot over high heat and add onion, garlic, carrot, finely chopped
-add salt, pepper, sugar, bay leaves and olive oil and stir well for 2-3 minutes
-add the fava and hot water,
-turn the heat into medium and cook, until the water evaporates
-remove from heat and put the fava, without bay leaves, into a food proccessor
-add lemon juice, salt, olive oil and lemon zest and mix well, until smooth
-serve with tomatoes, caper, onion(chopped) and drizzle with olive oil
-add salt if necessary
