Breakfast, brunch or dinner?..........I think you can serve them any time! These delicious savory muffins with smoked salmon filling are so easy to make and also easy to impress!
They have a perfect texture, a unique sweet- salty taste and a wonderful aroma! Black sesame seeds pair nicely with this mouthwatering snack. This recipe is one of my favorite for easy,but tasteful savory dishes, why not and yours?!..
RECIPE
ingredients:
-4 eggs, room temperature
-1 cup Greek yogurt, full fat
-1 cup fresh milk, full fat
-2 tablespoons butter, unsalted, room temperature
-2 cups self- raising flour
-200 g smoked salmon, chopped( very small slices)
-2 tablespoons mayonnaise
-1 leek, chopped
-black pepper
-black sesame seeds( for topping)
-sesame seeds (for topping)
method:
-preheat oven to 180 C or 356 F
-butter regular muffin tins or spray with non-stick cooking spray
-chop the salmon into very small pieces
-in a small non stick pan saute the chopped leek with butter, for 7-8 minutes, until caramelized
-combine the eggs and butter in a large mixing bowl and beat well
-add yogurt and milk and stir
-add the flour, until combined
-transfer the mixture in a large bowl and add black pepper, caramelized leek, salmon and mayonnaise, until combined well
-tranfer to the prepared pan and sprinkle with sesame seeds
-bake for 20-25 minutes or until golden brown
-serve warm
