A perfect, quick ,light, healthy, colorful, aromatic, tasteful dish for summer days!! For my lunch I cooked this delicious black- eyed pea salad with asparagus, fresh cherry tomatoes,sun dried tomatoes, red peppers, fresh thyme, parsley, pickled capers, eggs, olive oil, balsamic vinegar and coarse sea salt. A lunch full of nutritional benefits and rich in flavor!❤️
I serve it with many different ways but always cold and this time I used freshly baked bread with olive oil, oregano, salt and super aromatic basil!
