My own original recipe.
Prep Time: 15 minutes / Cook Time: 10 minutes
Ingredients:
2 fresh calamari with or without head
2 stems of fresh basil-finely chopped
1 tbsp capers-finely chopped
chili flakes-optional
1/4 cups grated parmesan cheese
3 tbsp melted butter or olive oil
2 tbsp of bourbon whiskey
Pinch of salt
Black pepper
Olive oil for grill
Method:
Clean the calamari and dry it with paper towel. With your thumb push the tail all the way in until the calamari turn inside out then slightly cut the middle part crisscrossed. (See the picture bottom). Sprinkle the calamari with some salt.
Heat the grill and brush with some olive oil, grill the calamari and brush each side with bourbon whiskey. Cut and place them into a clean bowl.
In another bowl, mix well the chopped basil, capers, chili flakes, black pepper, pinch of salt, melted butter or olive oil and grated parmesan cheese then mix it into the grilled calamari.
Serve.
The calamari's skin are turned, outside skin is inside and the stomach is outside and cut crisscrossed.
