Have you made your sourdough starter yet?
I hope so, because I have a recipe to die for. This is the easiest way to make pancakes that you've ever dreamed of. And it's my favourite way to use excess sourdough starter.
The recipe takes 2 cups of starter so it's perfect if you have a lot of unproofed starter, instead of throwing it out, make pancakes yo!

Start off with 2 cups of unproofed sourdough starter, 1 Tablespoon of Honey, 1/2 a teaspoon of baking soda and 1/4 teaspoon of salt.
I have my recipe doubled here, 3 growing boys you know...and I'm also adding apples. I usually add fruit to my pancakes.
Mix it all together, there should be a few bubbles forming already, the magic of baking soda hitting unproofed sourdough starer!
Start heating up your pan while you wait for more magic bubbles in your batter. I always use lard to griddle pancakes, but you can just use whatever you want.
Ahhh here we go, magic bubbles good to go! These are going to be some seriously nice and airy pancakes, with beautiful, shallow holes in them so that the butter and syrup just soaks right in...
You probably know the drill, but if not, when bubbles start forming in the centre of the pancake it's time to flip them over.
Flip them and cook for another 1 - 2 minutes.
Voila! Wasn't that easy? Now I only have to make 20 more and my work for the morning feeding my hungry sons is over!
See all those little holes? I love sourdough pancakes because of that. Just soaks in the syrup and butter soooo good!
Ingredients
- 2 cups sourdough starter (can be unproofed)
- 1 Tablespoon honey
- 1/2 Teaspoon baking soda
- 1/4 Teaspoon salt
Directions
- Mix together ingredients
- Wait 1-5 minutes until there are quite a few bubbles in the batter
- Heat pan to Medium-Low with butter, oil, or fat in it
- Cook pancake undisturbed until centre of pancake begins to form bubbles
- Flip and cook on the other side for 1-2 minutes
