I have known about Razon's of Guagua or simply and commonly known as Razon's through one of my former colleagues few years ago. She invited me for a break and have halo-halo at Razon's. Out of curiosity, I joined in. That was when I realized that the restaurant is popular because of their halo-halo.
That was years ago. This time, I again got into Razon's restaurant with a meal in mind.
The overhead menu has halo-halo and pancit luglug on top which tells me those are their specialties. Then I thought of pancit luglug. Why not?
Even on their flap menu, halo-halo and pancit luglug are on top. Again, that will tell their specialties. Most of the diners were actually having halo-halo when I got in. That firms up my initial choice of pancit luglug to have something different.
Pancit means noodles in Filipino. Luglug means to dip. Pancit luglug is a variety of noodle preparation that originated from the province of Pampanga where Guagua municipality is a part of.
As usal while waiting for my order, I took shots around. I was near the cashier and facing the entrance.
This is on the wall to my right. The map is of Pampanga province and the text to the right is a short write-up with the title "Pampanga's famous halo-halo and pancit luglug."
On the wall to the left are these decors boasting "Halo-halong sarap" or mixed deliciousness.
Okay, back to pancit luglug. What is it? It is steamed noodles topped with special sauce blend. From the write-up on the wall, pancit luglug has,
... natural blend of red sauce with baby shrimps, egg slices and finely crumbled chicharon...
Let me add calamansi to the topping because it is something very common for pancit. Pancit recipe will not be complete without it.
That was my first time trying pancit luglug of Razon's and it was indeed good. The noodles are still firm and not overcooked. The sauce is perfect with sweet and sour blend. Add to that the calamansi juice which I squeezed and spread over. I just wish thatthere were more shrimps!
The taste was good but I have to admit that the price is a bit more expensive than a regular pancit serving. That P120.00 (US $ 2.35) for a single serving pancit is a little expensive. That is the big difference when what you saw and ate in a different place may not be the same. That is called diversity.
