Greetings dear community this is my entry to the cooking contest with you and I want to share this food that has become the favorite of my home. "Lagarto Guisado"
The story behind this dish
I am from Venezuela a country where its gastronomy is characterized by having a great variety of stews. In our country it is customary to cook chicken, meat, vegetables, fish, venison, rabbit, etc. but it is not customary to cook lizard meat because it is only used for soup. In this country the economy is presenting serious problems and housewives have to be very creative when it comes to buying so that the money reaches for other necessities.
Once I did not have much money to buy meat or chicken and I decided to buy lizard which is a cheaper meat and I wanted to experiment preparing a great stew.
These were the ingredients I used to prepare the stew:
Eggplant
Cebollín
Chili pepper
Peppers
Onoto
Salt
My surprise? it became my family's favorite dish
The experiment came out better than I imagined, the lizard stew had a unique taste as a combination of flavor to chicken, fish and meat at the same time, with a pleasant texture and soft to the palate that accompanied with rice and a simple salad of Tomatoes and cucumber make an explosion of flavors and textures, ideal for a lunch!My family was surprised when they ate the dish and since then they ask me to do this rich experiment again.
