Caviar from baked aubergines with mayonnaise
A very quick and simple recipe for delicious snacks. This caviar is not rolled for the winter, but is eaten immediately. It is ideal for making sandwiches.

Ingredients
- 1 kg of aubergines;
- 1-2 tablespoons of salt;
- 2 tablespoons of mayonnaise;
- 1-2 cloves of garlic.
Preparation
Cut the eggplants in half. On the cuts, make deep cuts without touching the peel. Rub 1 spoonful of salt on each half of the eggplant on the inside and leave for 20 minutes.
Rinse any liquid from the vegetables and place them on a baking sheet in one layer. Sprinkle with salt and put in the oven preheated to 180 ° C for 30-40 minutes. Eggplants should become soft.
Peel the baked vegetables from the skin. Add to the pulp mayonnaise, finely chopped garlic and chop the blender to a homogeneous consistency.
