Vegan donuts, chocolate icing
Introduction
We offer for the occasion to realize a totally vegan version of the traditional recipe. Like what, the bakery can sometimes do without eggs and butter! If you do not want to add alcohol to your donut dough, replace the amber rum with orange blossom water.
ingredients
For the donut dough:
350 g of wheat flour T 65 Priméal
60 g of blond cane sugar
15 g Lev'Blé Priméal (fermentable leaven)
100 g of Priméal apple puree
2 tablespoons amber rum
100 g of coconut milk
1 teaspoon ground vanilla
½ teaspoon unrefined salt
For icing:
100 g of dark chocolate to bake
1 nut of vegetable margarine or coconut oil
50 g icing sugar
2 teaspoons of Primeal maple syrup
For cooking:
oil for frying (grape seed oil for example)
Steps :

Warm gently in a saucepan the coconut milk.

In a large bowl, pour the wheat flour. Add cane sugar, Lev'Blé, vanilla and salt.
Make a well. Pour in the apple puree, rum and coconut milk. Mix and knead by hand for a few minutes.

Grow the ball of dough obtained in a large bowl.

Take the dough and separate it into 10 pieces of about 65 g each.
Form a first ball, crush it. Press one finger in the center and turn to make a hole gradually.

Place the first donut on a baking sheet lined with baking or greased paper.
Perform the same operation with the other donuts. Let them grow under a clean cloth for about thirty minutes in an oven, lit for a few minutes and then off.

Heat the cooking oil 180 ° in a Dutch oven. Cook the donuts three by three for several minutes, while browning them on each side. Turn them over and take them out with a slotted spoon.

Melt dark chocolate with margarine or coconut oil in a bain-marie.
Dip the top of each donut, shake quickly to remove the excess. Return the donut and place it on a plate.

Renew the operation with the other donuts.
Mix the icing sugar with the maple syrup. Add a few drops of water. Mix everything to obtain a thick and fluid paste. Arrange this net icing on the donuts to make scratches, using a teaspoon.
