Homemade Lemon Garden and Lemon Syrup

So we can ask what to do with it, as you have seen here . The lemon balm is traditionally consumed in infusions of fresh leaves, because dried it is very good too but loses its lemony taste. But if you expect too much its leaves are of lesser quality. Syrup is therefore a good solution to maintain its taste and obtain a healthy product without all the additives found in commercial syrups. If you have lemon balm also called Lemon balm , in your garden, also enjoy with this syrup its soothing properties and / or its soothing effect on digestive disorders!
To get about 2 bottles of a liter you need:
a large salad bowl of balm leaves well packed
a good amount of patience (to fill the salad bowl ;-)
1.2 kg of brown sugar
2.5 L of water
2 untreated yellow or green lemons
In a large stew boil the 2.5 liters of water and place the lemon balm leaves with the zest of the lemons. Close the pot and let stand 12 to 24 hours.
After 24 hours, filter the contents into a colander to recover the resulting liquid, pressing the leaves well.
Put the liquid obtained in the pan or in a large saucepan with the brown sugar, mix well. Boil for about 10 minutes.
Cool and pour in airtight bottles. Let stand a few days before tasting. Store in the refrigerator after opening.
The color is light brown, guaranteed without dye! But even the kids were not shocked and they loved it. I am sure that at home this syrup will be at least part of the year the healthy alternative to commercial syrups ...
