Originally from Zambia but live here in Las Vegas Nv . Most of times it’s challenge to find Zambian food . So I started incorporating Western Food and Zamnian food . I love to cook and i come up with my own recipe . I just go by how I feel that day but always amazing.
Here is Cassava leaves mixed with dry powdered peanuts 🥜 Zambian delicacy 😋 we save this with fufu but didn’t feel like eating it with fufu . I just put it on sprouted bread and sprinkle Cayenne paper . Clean and very healthy soul food.
Boil cassava leaves for 25 minutes then add powdered dry peanuts 🥜 tomatoes onions cook another 15 minutes it’s ready .
