One of the delights of life is enjoying a delicious dessert and if it is homemade, much better, I share this delicious recipe that I make frequently for its simplicity and ease of making it the rich Venezuelan-style pumpkin pudding, I hope you like it.
Ingredients
600 g mashed pumpkin
75 g of wheat flour
100g sugar
3 eggs
1 tablespoon butter
75 g of corn flour or cornstarch
½ tablespoon yeast or baking powder
1 teaspoon vanilla flavor
¼ teaspoon cinnamon
For the caramel:
100g sugar
2 tablespoons of water
4 drops of lemon
Preheat the oven to 180ºC.
Prepare a dark caramel that covers the entire mold that you will use to make the pudding. If it is metallic, you can heat the sugar, water and lemon in the same mold and prepare the caramel there. If it is silicone, you must prepare the caramel in a pot and then pour it into the mold.
Prepare the squash puree by cooking the pulp in a pot of water until smooth. Then drain and mash.
Add the eggs, sugar, oil or margarine, cinnamon and vanilla, mixing well.
Finally add the flour. Depending on how firm the mixture is, you may need a little more flour to make it a little thicker.
Pour the mixture into the mold with caramel and take it to cook in a bain-marie in the oven, approximately 50 min or until you insert a toothpick and it comes out dry.
Let cool to room temperature and then put it in the fridge.
Unmold it minutes before serving.
You can decorate with more caramel. Enjoy this delicious and simple dessert.
