At the risk of sounding like a raddled old booze hound here I am again. One too many beers last night and the tequila was probably an awful mistake. So once again, some healthy, healing recovery soup is in order!!!
You will need
1 cup of lentils
1 big ole carrot
2 stalks of celery
1 medium onion
A tablespoon of lemon juice
A pinch of salt
1 litre of vegetable stock
A handful of parsley
1 bay leaf
Some black pepper
To make
Finely chop the onion and the celery
Stick some oil in a pot and put on a medium low heat, I am using my big old iron thing as it has a lid which we need. Any old pot with a lid will do.
Wallop your celery and onions in with a pinch of salt
Now dice that carrot
And pop in the pot too with your lemon juice
Put the heat to low and stick the lid on and let the onion, celery and carrot mix sweat a bit like a baker at a flour fair.
After five minutes or so open her up and throw in the lentils
Stir them in and add your bay leaf with the black pepper
Now add your litre of stock and simmer for twenty mins or so
After that twenty minutes roughly chop your parsley
And chuck in the soup
Now serve that steeming bowl of goodness up!
