Muffins with berries and particularly with nuts are my favorite to bake. You will never go wrong with this recipe, it´s the combination of coarsely chopped almonds and berries that make it so delish. Here, I used a silicon form for 12 for the first time, though in the beginning I had my reservations using it in the oven....you know, the heat and the rubber. But, I have to admit this is one of the best inventions in the baking history. You won´t need the teflon forms nor use butter to coat the base of your form. This silicon form is just wunderbar!
So, let´s have a go on this recipe... First, preheat oven at 180°C
Note: If you prepare the ingredients beforehand, you´ll be halfway done!
BERRY MUFFINS WITH NUTS
Ingredients: ( For 12 Muffins)
1 cup coarsely chopped almonds,
2 cups all purpose flour, sifted
1 teaspoon baking soda
a dash each of cinammon & nutmeg powder
1/4 tsp. salt
2 cups sugar ( if you are avoiding sugar, replace it with 8 tbsps Stevia powder)
3/4 cup vegetable oil
1 cup buttermilk
1 pack vanilla sugar
3 eggs
1 1/2 cups of mixed fresh or frozen berries.. (...thaw first and let the liquid drip by putting it in a sift)
Orange Marmalade for toppings
Baking steps:
1... In a bowl, mix together the flour, baking soda, cinnamon & nutmeg & salt.
2... Add the sugar, oil, buttermilk, vanilla & eggs. With an electric mixer beat at medium speed until batter becomes smooth, add the nuts.
3... Fill each muffin form with 2 tbsp batter, or spoon about 3/4 of the batter to the form. Top each form with mixed frozen berries. Place in the middle rack of the oven and bake at 180°C for about 20 minutes. 5 Minutes before the baking time ends, take out the muffins and brush each of the top with 1/2 teaspoon marmalade. Return to the oven and bake for 5 minutes more.
4...Take out muffins and cool all on wire rack. Serve warm or cold.
