This sweet snack idea is quick and super easy-to-make ... homemade dark chocolate peanut butter cups!
This FIVE INGREDIENT ONLY recipe is packed with a punch of protein (and some anti-oxidants too!)...

Dark Chocolate Peanut Butter Cups Recipe
Ingredients
For the peanut butter filling:
8 oz organic unsalted peanut butter
1/4 cup confectioners' sugar
fine sea salt, to taste
For the dark chocolate:
1 lb solid dark chocolate (60 - 70% cacao), chopped
2 tbsp organic coconut oil
This recipe makes two dozen (or 24 pieces) of dark chocolate peanut cups.
Before we get started, you'll need a mold of some sort. To make "traditional style" chocolate peanut butter cups, use paper or silicone bake cups.
I enjoy using re-usable silicone cups ... and as you can see, my treats popped out with ease!
Directions
For the peanut butter filling:
- In a mixing bowl, add 8 oz of unsalted organic peanut butter and slowly stir in 1/4 cup of confectioners' sugar to create a dough-like texture.
- Add fine sea salt, to taste.
For the dark chocolate:
- To start, chop (if needed) up your dark chocolate. I'm using a one pound plus bar of Belgian dark chocolate.
- Place chocolate bits in a heatproof bowl over a pan of simmering water (a bain-marie). Allow the chocolate to melt, stirring occasionally.
- Add the coconut oil (2 tbsps) to the melted chocolate and stir.
For the dark chocolate peanut butter cups:
Pour a thin layer of the melted chocolate at the bottom of your bake cups. Next, freeze for ten minutes to set the chocolate.
After ten minutes, remove cups from freezer and add a scoop (about one teaspoon each) of peanut butter dough to the center of each cup. Gently press down the dough mixture with a spoon or your thumb to flatten.
Next, spoon the remaining melted chocolate over the tops of each cup (you many need to reheat chocolate).
Freeze cups for half an hour to completely set. Tip: Thaw your treats for a few minutes before serving them!
Now you're ready to enjoy your very own homemade dark peanut butter cups! : D
