Salad of fish, bacon and sun-dried tomatoes

Ingredients
- fish (tuna or salmon ) 1.2 kg;
- a little sea salt;
- a little ground black pepper;
- a few tablespoons of olive oil;
- 1 ciabatta;
- 12 pieces of bacon;
- 50 g of arugula;
- a bunch of fresh mint;
- 145 g of dried tomatoes in olive oil;
- spices - to taste;
- some balsamic vinegar.
Preparation
Scrub the fish with salt, pepper and a little olive oil. Put on a baking sheet and bake in a preheated oven to 200 ° C for about 1.5 hours, until ready.
Half an hour after the start of cooking, put pieces of ciabatta on a baking tray with fish to make croutons. When the meat is baked, remove the baking tray from the oven. It should cool down a little.
With your hands or with a fork, divide the fish into several medium size pieces. Fry the bacon in olive oil until a crispy crust appears.
Mix the fish, croutons, rukkola, mint leaves, dried tomatoes and bacon. Add the spices, season with balsamic vinegar and olive oil.
Serve the salad with a glass of refreshing white wine.
