This low-fat broccoli soup is a very healthy and filling soup recipe. Onions, carrot and broccoli are cooked in vegetable stock / broth and are pureed in this recipe.
This simple soup is sooper easy to prepare and can be prepared in less than half an hour. This healthy soup makes a delicious and satisfying lunch when served along with toasted bread.

Ingredients
- 3 medium head of broccoli;
- 3 tablespoons butter;
- 1 medium bulb;
- 1 large apple;
- 50 g peas;
- 700 ml of chicken broth;
- 250 ml of apple juice;
- 4 sprigs of fresh thyme;
- 2 medium strips of lemon peel;
- salt - to taste;
- several feathers of green onions.
Preparation
Separate the broccoli inflorescence from the stems. Cut off the top layer of stems and cut them into small pieces. Melt the butter in a saucepan or pot over medium heat. Add the chopped onion and peeled and diced apple. Reduce heat, cover and cook for 10 minutes until the ingredients soften.
Add crushed stems and inflorescences of broccoli, broth, juice, thyme and zest. Bring to a boil over high heat. Then reduce it and simmer under the lid for another 20-25 minutes.
Remove the soup from the plate, remove thyme and zest. Purish the soup with a blender and season with salt. Before serving, decorate with chopped onions.
