My mother made such an effort with our Sunday dinners when I was a kid. We had jollof rice on occasion, but mostly Nigerian white rice. We didn't eat fried rice very often since it was regarded a dish for the social elite — and we didn't have as much money as the social elite. My mother, on the other hand, cooked Fried rice anytime she received a salary or made a large profit. Aunt Funmi, her younger sister and a chef, taught her how to make fried rice. It was made with long-grain parboiled rice and various chopped veggies simmered in a delicious yellow sweet corn and dried thyme sauce. You can add chopped liver if you want to spice it up another level.
Rice is a popular food in Nigeria. In general, white is preferred since it is less flaky and time-consuming, but there are days when I can't stop thinking about fried rice with liver and sliced cucumbers until I've made a pot and served it with fried chicken. After I came back from church, I went to a local store to get the fried rice ingredients and the chicken.
INGREDIENTS
Rice
The Chicken
Sliced Green Ball Pepper
Yellow Sweet Corn
Green Beans
Curry and Thym
Red Pepper (Blended)
Vegetable Oil
Onions (Sliced)
Liver (Cooked)
Green Leaf
Cucumber
Salt and Maggi.
Step 1: Seasoned the chicken, boil and see fry very well.
Step 2: Now the liquid used to boil the chicken can be used to boil the rice, since it has been seasoned you can re-use it to boil your rice. Add the curry and fried rice spice that will make the colour green.
Step 3: Get a new sauce pan, add vegetable oil.. now fry the sliced onions, carrots, blended pepper and green leaf. Don’t forget the green beans and the liver (sliced).
Step 4: Bring out the cooked rice, then combine it with the vegetables and stir together… then finally add the fried chicken.
Now serve and enjoy, make sure you serve with the fried chicken (recommended).. enjoy and don’t forget to share with your neighbors 😁
